Vegan Green Goddess Dressing

Mondays tend to get a pretty bad rep, but I personally tend to be a fan. It may be because Monday is technically my Sunday (and definitely has something to do with Bachelor Monday), but I always feel ready to tackle the week ahead – especially when it comes to my food choices. Don't get me wrong, I love sweets and treats as much as the next girl, but I also love starting the week feeling refreshed, healthy, and fit. 

I came across this green goddess dressing last night, and knew that I wanted it to be the focal point of my meals for the week. Many green goddess dressing recipes call for mayo, yogurt, and even buttermilk. While I do not typically follow a dairy-free diet (seeing me give up cheese would be comical), I really dislike mayo, and wanted to make something super simple, fresh, and clean, using only greens, oil, and vinegar. 

This dressing is so vibrant in color, incredibly flavorful, and is sure to make everyone feel like a goddess. It's packed with greens and EVOO, is vegan, and pairs perfectly with a kale salad, buddha bowl, or sweet potato.  I feel most like a goddess when I'm eating tons of whole foods and greens, staying super hydrated, and have a good vitamin D glow going on. This dressing is sure to help you get your goddess on.

Recipe adopted from The Foodie Dietitian

1 garlic clove
1 1/2 small - medium avocados
5 tbsp EVOO
6 tbsp water
3/4 cup basil
1/4 cup parsley
1/4 cup chives
1/2 cup scallions
juice of 1 1/2 small lemons
2 tbsp apple cider vinegar
1/2 tsp salt

In a food processor, blend together garlic, avocado, olive oil, and water. Add basil, parsley, chives, and scallions and pulse to blend. Add lemon juice, apple cider vinegar, and salt and blend to combine.
